The grapes come from carefully pruned vines under rigorous canopy management. They are hand-picked in selected lots, sorted, and sent to stainless steel tanks for a five-day cold soak to extract aroma, flavor and color. Fermentation takes place at controlled temperatures (24-26°C), followed by a warm maceration to extract the roundest, silkiest tannins.
