This vineyard is characterized by quartz-flecked clay at the surface, sitting over a matrix of old yellow granite that gives these wines their mineral signature.
Winemaking & Fermentation
The grapes come from gentle north-facing slopes. Fermentation takes place in stainless steel tanks at low temperature (10-12ºC).
Aging
The wine rests on its fermentation lees for 4 months, gently stirred to build structure.
