Carménère

The grapes are harvested from very small, selected plots in high-density vineyards across the Colchagua Valley. Coming from rocky hillsides, the roots draw minerals and freshness from these volcanic basalt soils. The vines are pruned with double Guyot, under strict canopy management and controlled irrigation to fully express their origin.

Pairing

Chilean home cooking and wine-reduction dishes

Its notes of bell pepper and spice pair beautifully with traditional Chilean dishes like beef empanadas, pastel de choclo, grilled sirloin and charquicán. Its black-fruit, chocolate and gentle spice notes also work perfectly with dishes built on sweet-and-sour sauces or wine reductions — a steak with mushroom sauce or a wild-mushroom risotto are ideal.
