Soil This vineyard is located on a slope facing the North-West, and grows on a soil based on clay with quartz in its first 60 centimeters of surface. Underneath, we find a matrix of old yellow granite, which gives its mineral stamp to this wine.
Vinification and fermentation Separated into 2 batches of grapes, the highest sector of this slope will ferment in a 3-ton stainless steel tank, and the lower sector in a 2-ton open wooden vat, both of them with grape-stomping. The fermentation time will be between 8 to 10 days.
Aging The high sector of the vineyard will age in 228 L barrels, the lower sector in concrete eggs. Total time 12 months.
