Vinification and fermentation | Separated into 2 batches of grapes, one will be fermented in a 3-ton stainless steel tank, and the other in a 17-hL concrete egg, both with grape-stomping. The fermentation time is between 12 to 14 days. |
Aging | 400 L French oak barrels and concrete eggs for 9 months. |
