Soil This vineyard is located on a north-facing slope and grows on clays with quartz in its first 80 centimeters of surface. Underneath, it is mounted on a granite matrix, which gives its mineral stamp to this wine.
Vinification and fermentation Separated into 2 batches of grapes, one will be fermented in a 3-ton stainless steel tank, and the other in a 17-hL concrete egg, both with grape-stomping. The fermentation time is between 12 to 14 days.
Aging 400 L French oak barrels and concrete eggs for 9 months.
